What You’ll Need

For the Stir Fry

  • 1 tablespoon oil
  • 1 onion, diced
  • 5 garlic cloves, minced
  • 1 heaped tablespoon fresh ginger, minced
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon smoked paprika
  • Black pepper and sea salt, to taste
  • Pinch of cayenne pepper
  • 1 medium head of broccoli (about 450g), cut into small florets
  • 1/3 cup vegetable broth
  • 1 (15 oz) can chickpeas, rinsed and drained
  • Cooked rice of choice, for serving

For the Sauce

  • 1/2 cup water
  • 3 tablespoons soy sauce (gluten-free if needed)
  • 2 tablespoons rice vinegar or balsamic vinegar
  • 2 tablespoons maple syrup or sweetener of choice
  • 1 tablespoon cornstarch

How to Make It

Start by heating the oil in a pan over medium heat.

Add the onion, garlic, ginger, and spices. Let everything cook for about 3 to 4 minutes until it becomes fragrant and slightly softened.

Add the broccoli and vegetable broth. Cook for about 10 minutes, until the broccoli is tender but still has some bite.

While that’s cooking, whisk together all of the sauce ingredients in a bowl until smooth.

Pour the sauce into the pan and add the chickpeas. Bring everything to a gentle boil, then let it simmer for a few more minutes until the sauce thickens and coats everything evenly.

Taste and adjust as needed. Add a little more salt, pepper, or cayenne if you want more heat.

Serve on its own or over rice.
